The most recognizable version being the Chipotle pepper that originated in pre-Aztec Mexico. These various smoked pepper flavors, blended with post-medieval European herbs and spices such as garlic, cumin and coriander/cilantro brought to the New World by the Spanish have influenced South, Central and Southwest American cuisines for centuries.
