Whether you prefer classic Cast Iron or enameled Cast Iron, use this complete how-to guide to maintain your Cast Iron cookware for a lifetime.
How to Properly Season Cast Iron Cookware:
- Even if your cookware comes "pre-seasoned," you will want to do a bit of seasoning before first use. To start, hand wash with warm water and dry immediately.
- After drying, spread a few drops of oil (any high-smoke-point oil will work, ie. shortening or vegetable oil, but avoid seed oils and avocado oil) to see a sheen without the pan feeling “sticky”. Use a paper towel or rag to spread the oil evenly over the surface of the pan. This keeps the iron seasoned and protected from moisture.
- Pre-heat your oven to 450 degrees Farenheight and place your pan in the oven upside down. Let bake for one hour. We recommend placing foil on the rack below your pan to catch any oil drippings.
- Once your pan has been in the oven for one hour, take it out and let it completely cool. For brand new pans, it is recommended to repeat steps 1-3 multiple times to ensure proper seasoning of the entire pan.
Cast Iron Care Tips:
- When washing Cast Iron cookware, mild dish soaps work best when used with a stiff-bristled brush or a chainmail scrubber. Rough materials such as steel wool can cause the seasoning to strip.
- Do not soak your Cast Iron in water for prolonged periods, as moisture causes iron to rust. Once your Cast Iron is wiped free of soap, towel dry immediately and set on the stove on low heat to evaporate any remaining water. Never allow Cast Iron to air dry.
- After your cookware is fully clean and dry, apply a thin layer of cooking oil to preserve the seasoning.
Fun Facts About Cast Iron:
- Cast Iron can be used on any type of stove, whether that's induction, ceramic, electric, or gas. Cast Iron can also be used in ovens, on the grill, and even in campfire cooking (though you might not want to lug a 30-pound Lodge skillet through the woods!).
- Cast Iron rarely needs to be heated above a medium heat setting. For those recipes that do require a higher heat setting, bring the pan to temperature gradually and add oil just before adding food to prevent sticking.
- Soap will not kill your Cast Iron cookware, so long as it is used sparingly and is not a heavy detergent or lye-based soap. Most regular dishwashing soaps are fine.
- Although Cast Iron cookware is often labeled as "pre-seasoned," you should still follow the initial seasoning process if the cookware is brand new.
- Acidic foods like tomatoes, beans, and certain sauces can damage seasoning and cause a slight metallic taste in foods as they can cause metal to leach. These should be avoided until cookware is very, very well-seasoned.
