Ken Dempsey's Dutch Babies
Ingredients:
- 1 cup all-purpose flour
- ¼ teaspoon salt
- 1 cup whole milk
- 4 large eggs
- ½ stick salted butter
- 1 teaspoon vanilla extract
- 12 inch cast iron skillet
Instructions:
- Heat skillet in 425° oven for 1 hour.
- While the skillet is heating, mix the first 3 ingredients until smooth.
- Add eggs, one at a time, and mix until incorporated.
- Let the batter sit at room temperature until the skillet is ready.
- Pull the skillet out of the oven, add butter (the butter should sizzle).
- When butter is melted, add the Dutch Baby batter into the skillet, and return the cast-iron to the oven.
- Bake for 20 minutes and then reduce the heat to 375°.
- Bake for an additional 10 or so minutes.
