Ken Dempsey's Dutch Babies

 

Ingredients:

  • 1 cup all-purpose flour
  • ¼  teaspoon salt
  • 1 cup whole milk
  • 4 large eggs
  • ½ stick salted butter
  • 1 teaspoon vanilla extract
  • 12 inch cast iron skillet 

Instructions:

  1. Heat skillet in 425° oven for 1 hour.
  2. While the skillet is heating, mix the first 3 ingredients until smooth.
  3. Add eggs, one at a time, and mix until incorporated.
  4. Let the batter sit at room temperature until the skillet is ready.
  5. Pull the skillet out of the oven, add butter (the butter should sizzle).
  6. When butter is melted, add the Dutch Baby batter into the skillet, and return the cast-iron to the oven. 
  7. Bake for 20 minutes and then reduce the heat to 375°.
  8. Bake for an additional 10 or so minutes.
