Richelle Antipolo's Bibimbap

 

Bibimbap is a popular Korean rice dish consisting of meat, fried egg, seasoned vegetables, and gochujang. A popular variation of this dish, dolsot bibimbap, is served in a stone bowl to crisp the rice on the bottom. Bibimbap translates to "mixed rice" in English.

Richelle Antipolo's Bibimbap

Steamed Rice

Ingredients:

  • 1 1/2 cups water
  • 1 cup long-grain white rice

Instructions:

  1. Wash rice until water runs semi-clear.
  2. Bring water to a boil in a medium saucepan. Stir in white rice and salt. Return to a boil over medium-high heat.
  3. Reduce heat, and simmer, covered, until rice is tender and has absorbed all the water, 16 to 18 minutes (check only toward the end of cooking time). The rice will be studded with steam holes when ready.
  4. Remove from heat, and let stand, covered, for 10 minutes. Fluff with a fork before serving.


Spinach

Ingredients:

  • 1 bunch of spinach
  • 1 tablespoons sesame oil
  • 1 teaspoon minced garlic
  • Salt and pepper to taste 

Instructions:

  1. Blanch the spinach for 30 seconds.
  2. Immediately place the spinach in an ice water bath.
  3. Squeeze the excess liquid and put it in bowl.
  4. Add the sesame oil, minced garlic, salt and pepper to the spinach.
  5. Massage ingredients until well incorporated. 


Bean Sprouts

Ingredients:

  • 1 handful of bean sprouts 
  • 1 tablespoons sesame oil
  • 1 tablespoon minced garlic
  • Salt and pepper to taste 

Instructions:

  1. Blanch the spinach for 30 seconds.
  2. Immediately place the spinach in an ice water bath.
  3. Place bean sprouts in a colander to remove excess water.
  4. In a separate bowl add the sesame oil, minced garlic, salt and pepper to the bean sprouts.
  5. Massage ingredients until well incorporated. 


Carrots

Ingredients:

  • 1 carrot
  • 1½ tablespoons soy sauce
  • 1 tablespoon of neutral-flavored oil
  • Salt and pepper to taste

Instructions:

  1. Cut the carrots into match sticks (or you can purchase them precut)
  2. Heat up the oil on the skillet.
  3. Once heated, add the carrots, soy sauce, salt and pepper.
  4. Cook until mostly tender. 


Zucchini

Ingredients:

  • 1 zucchini 
  • 1½ tablespoons soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of neutral-flavored oil
  • 1 tablespoon of minced garlic
  • Salt and pepper to taste

Instructions:

  1. Cut the zucchini into match sticks.
  2. Heat up the oil on the skillet.
  3. Once heated, add the zucchini, soy sauce, sesame oil, minced garlic, salt and pepper.
  4. Cook until halfway tender. 


Mushrooms

Ingredients:

  • 4 ounces mushroom (shiitake, white, cremini, etc.) 
  • 1 tablespoon of neutral-flavored oil
  • Salt and pepper to taste

Instructions:

  1. Thinly slice the mushrooms.
  2. Heat up the oil on the skillet.
  3. Once heated, add the mushroom and saute for 3 minutes.
  4. Sprinkle salt and stir. 


Marinated Meat

Ingredients:

  • 8 ounces of ground beef (you can also use thinly sliced rib eye, sirloin, etc.)
  • 2½ tablespoons soy sauce
  • 2 teaspoon sugar
  • 2 teaspoon sesame oil
  • 2 teaspoon rice wine
  • 2½ teaspoon of minced garlic
  • 2 teaspoon of gochugaru (Korean pepper powder)
  • Black pepper to taste

Instructions:

  1. Mix everything until well incorporated and let it marinate in the fridge for 30 minutes to an hour. (If you’re using meats other than ground beef, it is best to let it marinate over night). 
  2. Heat up a skillet and cook the marinated meat until brown. 



Bibimbap Sauce 

Instructions:

  • ½ cup gochujang
  • ¼ cup toasted sesame oil 
  • ¼ cup sugar
  • ¼ cup water
  • ¼ cup sesame seeds
  • 4 teaspoon rice vinegar
  • 4 teaspoon minced garlic   

Instructions:

  1. Mix everything until sugar has dissolved.

Pro Tip from Richelle: If you don’t want a pepper based sauce, here is a recipe for a soy based sauce: ½ cup soy sauce, 4 teaspoons sugar, 4 teaspoon sesame seeds, 1 tablespoon sesame oil, 1 teaspoon minced garlic. Mix everything until sugar has dissolved. 



Sunnyside up Egg

Ingredients:

  • 1 large egg
  • 1 tablespoon of neutral-flavored oil

Instructions:

  1. Heat oil in skillet over medium heat.
  2. Tilting pan to evenly distribute the oil.
  3. Carefully break eggs into the skillet and cook until the whites are set on and top and the yolk is still runny (about 3 minutes).
  4. Transfer to a plate or the bed of rice.



Presentation:

  1. Put some rice in a bowl and flatten to give the other ingredients a flat surface.
  2. Put the sunny side egg in the middle (or on top).
  3. Place all the sauce, vegetables and meat around the yolk.
  4. Take a picture put it on your social media.
  5. With a spoon mix all the ingredients together and then eat.
