Korean Spam Fried Rice

Ingredients:

  • Day-old rice
  • Neutral-flavor oil (vegetable, canola, avocado, etc.)
  • Minced garlic
  • Diced onion
  • Spam (cut in to desired shape)
  • Egg
  • Gochujang
  • Sesame oil
  • Soy sauce
  • Green onions (thinly sliced)
  • Sesame seeds (optional)
  • 2 Tbsp gochujang
  • 2 Tbsp soy sauce
  • 1 Tbsp sesame oil

Instructions:

  1. Cook the spam in about 2-3 tablespoons of cooking oil, once brown removed it from the oil and put it aside.
  2. Cook the garlic and onion in the spam oil.
  3. Once the garlic and spam have a little color add the rice. Cook until rice starts to soften and has the garlic and onion well distributed throughout.
  4. Add back the spam, mix all together.
  5. Add the sauce, mix until everything is evenly coated.
  6. Push the rice to edges of the pan to create a empty circle in the middle, add oil and whisk egg until scrambled then mix in with the rest of the rice.
  7. Garnish with green onions and sesame seeds.

Tips for a better Spam Fried Rice:

  1. If you don’t want it spicy, just omit the sauce.
  2. If you let the rice cook too long, it starts to char and get firm, so be sure to move it around in between letting it sit in the heat.
  3. This is also tasty if you top it with a fried egg.
