Rose Duyar's Köfte Kebabs
Ingredients:
- 1 pound ground beef (80/20) (or ground lamb for more moist Köfte)
- 1 medium onion finely chopped or grated
- 1 cup breadcrumbs
- 1 teaspoon each black pepper, ground cumin, red pepper flakes
- 1 whole egg
- salt to taste
- vegetable oil or olive oil
- 1/4 cup water for ground beef recipe
Instructions:
- In a large mixing bowl, combine ground beef or lamb, onion, egg, spices, bread crumbs, and salt. Mix together until fully combined. Let mixture rest in the refrigerator about 2 hours.
- Form mixture into mandarin-sized balls, and press into individual wooden skewers. Dip your hand into oil occasionally to ease the process.
- Heat griddle, non-stick frying pan, or grill and brush with oil. Add Köfte skewers, leaving space between them, and cook on medium heat until both outside and inside are fully cooked.
