Rose Duyar's Köfte Kebabs

Ingredients:

  • 1 pound ground beef (80/20) (or ground lamb for more moist Köfte)
  • 1 medium onion finely chopped or grated
  • 1 cup breadcrumbs
  • 1 teaspoon each black pepper, ground cumin, red pepper flakes
  • 1 whole egg
  • salt to taste
  • vegetable oil or olive oil 
  • 1/4 cup water for ground beef recipe

Instructions:

  1. In a large mixing bowl, combine ground beef or lamb, onion, egg, spices, bread crumbs, and salt. Mix together until fully combined. Let mixture rest in the refrigerator about 2 hours.
  2. Form mixture into mandarin-sized balls, and press into individual wooden skewers. Dip your hand into oil occasionally to ease the process.
  3. Heat griddle, non-stick frying pan, or grill and brush with oil. Add Köfte skewers, leaving space between them, and cook on medium heat until both outside and inside are fully cooked.
