Rose Duyar's Turkish Manti (Ravioli)
Yogurt Sauce
- 2 cups of plain yogurt
- 2 to 3 garlic cloves, minced or grated
- Salt, to taste
- Combine all ingredients.
- Refrigerate until needed.
Tomato Sauce
- 1.5 sticks of salted butter
- 6-7 tablespoons of tomato paste
- 2 tablespoons of dried mint

Pasta water
- Melt the butter.
- Once melted, add tomato paste and stir until blended.
- Add dried mint.
- Add pasta water until sauce reaches preferred consistency.
Dough
(Wonton Wrappers cut into quarters may be used as an alternative)
- 2 cups all-purpose flour, plus more for dusting
- ½ teaspoon salt
- 2 large eggs
- ½ teaspoon water, or as needed
- Combine all the ingredients.
- Kneed thoroughly and let rest for 30 minutes
- With a rolling pin, flatten the dough.

Cut into small grid.
Filling
- 8 ounces lean ground beef or lamb
- 1 onion, grated or very finely chopped
- Salt, to taste

Black Pepper, to taste

Combine ingredients and add to slice of dough. Take other half of dough and place on top of the filling, pressing the ends of the dough pieces together with fingers or a fork.
